  • Celebrate with Carrot Cake

    carrot cakeJune already? Wow! Time sure flies by when you’re havin’ fun!
    May was a full month of celebration for our family! Between the special occasions (including our youngest sister receiving some awards in school, our youngest brother getting engaged, and the arrival of our newest nephew!!), the holidays, and the birthdays, we have had lots of opportunities to bring out the cake and celebrate!! Of course we didn’t eat dessert for all of those celebrations, just for our own birthdays. Since my husband’s birthday and my birthday are just days away from each other, we alternate which birthday gets a birthday cake. This year it was for his birthday, so I chose to make carrot cake—you know, so we can eat an extra slice and not feel as guilty because it’s got some fruits and veggies in it! Hahaha!!  Actually, carrot cake is both of our favorite flavors of cake! Although neither of us have a gluten-intolerance, we decided to give the Gluten-Free Carrot Cake with White Chocolate Cream Cheese Frosting a try. If we didn’t know it was gluten-free, we never would have believed it—it tastes amazing!!

    gf carrot cakeTo make this delicious dessert, start by opening up the Mylar bag to see what’s inside. You should find a packet of brown sugar, a packet of white powder (that’s the frosting), a packet of white chocolate chips, and then the gluten-free cake mix. Once you’ve made sure it’s all there, preheat the oven to 350 Degrees and then generously grease a cake pan to help the cake come out easily.

    Now it’s time to make the cake mix. Cream together 2 eggs and ½ cup of either vegetable oil (as called for) or I used melted butter—either one is fine. Next blend in the packet of brown sugar, then dump in the cake mix (the loose powder in the Mylar bag). Once that is all blended together, add in 2 cups of shredded carrots*, ½ cup of pineapple chunks*, and then you can add in the optional ½ cup of walnuts and 1 cup of raisons. *Feel free to use the dehydrated carrots and freeze-dried pineapple chunks, just be sure to let them soak in hot water as your very 1st step, but be sure to drain out the excess water before adding to the cake mix.

    Once everything is well blended, pour into the greased cake and bake for 30-35 minutes (33 minutes worked perfectly for my cake!).

    After the cake was baked, I let it cool almost completely, then flipped it upside down onto a wax paper-lined cutting board to decorate it, then gently tapped on the pan to get the cake out.

    Now it’s time to make the frosting. Melt in a medium sized bowl the packet of white chocolate chips and ½ cup of butter. Once they’re melted, dump in 1-8oz package of cream cheese and 2 tablespoons of heavy cream. Whip it all together using an electric mixer (or the amazing Bosch!) until it becomes the fluffy frosting desired. Wait until the cake is completely cooled off before frosting it.

    This gluten-free carrot cake should be stored in the fridge and eaten within 4-5 days for best flavor. Enjoy!

    Delicious almonds! Delicious almonds!

    TODAY IS ALMOND DAY!! Have you had your helping of almonds today?? If not, here’s why you should have a good helping of almonds every day! All the vitamins and minerals found in almonds are very beneficial to one’s body, mind, and weight. Eating just 23 raw almonds each day can make a significant improvement in one’s life. Studies have shown that an almond-rich diet can help with memory improvement, which can also reduce the risk of developing Alzheimer’s. Almonds can strengthen one’s heart, teeth, and bones. Using the oil from almonds is also very useful in nourishing one’s skin and hair. For example, using almond oil will help reduce acne and scaring of the skin. The antioxidants found in almonds can help reduce dandruff when rubbed onto the scalp. With so many positive things about almonds, it’s definitely worth including them in one’s food storage.

    For those days when you need a sweet treat, try this recipe for Cinnamon Sugar Almonds cooked in the crock pot. Start by spraying the inside of your crock pot generously with cooking spray. Stir together 1 ¼ cup of white sugar, 1 ¼ cup of brown sugar, and 3 tablespoons of cinnamon. In a separate bowl, whip together one egg yolk and 2 teaspoons of vanilla extract. Whisk by hand until it becomes frothy. Dump 3 cups of almonds—1 cup at a time—into the egg/vanilla liquid.

    Scoop the almonds into the cinnamon/sugar powder. Stir thoroughly until all the almonds are nicely coated. Pour that bowl into the crock pot and let it cook on low heat. Stir every half hour for 2 hours or until the almonds are soft. Pour ¼ cup of water into the crock pot and stir well. Cook for another hour, then dump the almonds onto some wax paper to dry. For a little extra zing, mix together ¼ cup white sugar, ¼ cup brown sugar, and ½ a tablespoon of cinnamon, then sprinkle on top of the almonds after they are first placed onto the wax paper.
    This delicious, but rich treat will satisfy all your taste buds while providing some of the benefits that almonds have to offer.

    Boil some water on the stove. Add your soup mix. Stir until all the powder is mixed in, then stir occasionally as it cooks for about 10 minutes. Once it starts to set up, it’s ready to serve!

  • Creamy Penuche

    Creamy Penuche Creamy Penuche

    Are you looking for a delicious and easy candy for Easter?  Well look no more.  Penuche is one of my family’s favorite candies to eat, and it is not that difficult to make.  If you’ve never had it before, it is kind of like caramel fudge.  Here is my recipe:

    Mix together in a 3 quart pan:

                  ½ tsp. salt

                  2 cups white sugar

                  1 cup brown sugar

                  2/3 cup corn syrup

                  1 cup cream or 1 cup evaporated milk* or 1 cup water mixed with 2/3 cup instant milk*

                  ¼ cup butter or butter powder  ( ¼ cup water mixed with ¼ cup butter powder)

    *Note:  if you use evaporated milk or instant milk be sure to add 2 ounces more butter.

    Bring mixture to a boil, stirring constantly.  Cook to soft ball stage.  I use both a candy thermometer and the cold water test.  When mixture reaches soft ball stage, remove it from heat and let it cool without stirring for 45 minutes.

    After 45 minutes add 1 tsp. vanilla and 1 c. walnuts (optional).

    Stir mixture until it loses its gloss and thickens.  This takes about 10 minutes. Pour into a buttered pan and let it finish cooling.  Cut into squares and ENJOY!

  • Heavenly Banana Cream Pie

    We had a birthday at our house and the one thing that was requested was Banana Cream Pie.  It really is one of our family’s favorite foods. I love that it is so easy to make. Here is the recipe:

    Combine these ingredients in a saucepan:  2/3 c. sugar        1/3 c. cornstarch       1/2 tsp. salt

    Gradually add 2 cups powdered milk and 3 egg yolks. 

    Heat until it boils, stirring constantly.  When it thickens, remove from heat.  Add butter powder equivalent to ¼ c. butter and 1 tsp. vanilla and half of a sliced banana.  Although I didn’t do it, you could use freeze dried bananas in this recipe.

    Put graham cracker or vanilla wafer crumbs in the bottom of a baked pie crust.  This will keep your crust from getting soggy.  Slice 1 banana onto crumbs.  Pour mixture into shell.

    Refrigerate until cooled then add whipped topping.  Enjoy!!

     Ever have those nights when dinner just needs a lil something extra, but you just don’t know what to do with it? Next time you find yourself in this situation, why not try whipping up a little bit of Rainy Day Foods Nacho Cheese Sauce Mix and add some flavor to your meal.

    This sauce mix is VERY QUICK and EASY to mix!!

    Just mix it, whisk it, cook it, and WA LA! You’ve got the right amount of nacho cheese to drizzle over your meal.

    For this particular meal, I made enough for just my husband and myself, and there was none left.

    Add one part nacho cheese sauce mix into a bowl and pour in two parts water; for two servings, use ½ cup of nacho cheese powder and 1 cup of water.

    Whisk this mixture together to get rid of the powder chunks, then microwave it. I cooked ours for 4 minutes; you want the sauce to be thick and not watery, so microwave as needed.

    Whisk the nacho sauce again, and then serve with any meal of your choice!

    It’s absolutely delicious on mixed veggies, baked potatoes, those soft, baked pretzels, and especially NACHOS!

  • Powdered Milk

    Milk is a basic ingredient for so many recipes as well as a favorite beverage.  But if you’re not able to run to the store for a gallon, powdered milk is handy and easy to use.  That’s why it is so important to include it in your food storage plans. 

    What is powdered milk?  Powder milk is made from fresh, pasteurized skim milk.  First, the milk is concentrated in an evaporator until 50% of the milk solids remain. Next, the concentrated milk is sprayed into a heated chamber where the water almost instantly evaporates, leaving behind tiny dry milk particles.  What is the difference between instant and non-instant powdered milk?  Instant milk is non-instant milk that has been puffed with air which makes it mix into water easier.  In fact you could just drop it into water and it would dissolve instantly.  Non-instant milk, also known as regular non-fat dry milk, requires more stirring and chilling before it can be served as milk.

    It is very simple to use powdered milk.  You simply mix it up and drink it!  Some people add a drop or two of vanilla or a spoonful of sugar to their milk to enhance the flavor. In your baking or cooking, you can simply add the dry milk powder with the dry ingredients and the water necessary to hydrate it with the wet ingredients.  One word of caution:  some companies sell powdered milk that isn’t REAL milk.   They may call it a “milk alternative.”  These contain a lot of ingredients to make it taste good including whey, partially hydrogenated vegetable oil, and high fructose corn syrup.  It is not 100% milk.  As a result, it tastes yummier, but does not have as much protein, calcium and other nutrients.  It will also affect your baking.  It doesn’t have the vital milk protein which is important in some cooking and the extra shortening may change what you are cooking. 

    Having never used powdered milk before, I decided to try it in one of our favorite recipes:  Hot Fudge Sauce.  This recipe is so easy and tastes delicious on ice cream or brownies.  Here it is:

    Mix together 2 cups of sugar, 4 tablespoons of baking cocoa, and 4 tablespoons of flour until smooth.

    Add ½ cup of butter, 1 teaspoon of vanilla and 1 12oz. can of evaporated milk.

    Instead of the evaporated milk, I used 9 tablespoons of powdered milk and 9 oz. of water.  I mixed it together separately and added it with the butter and vanilla.

    Bring this to a boil over medium heat stirring constantly.  Boil for 3-5 minutes.

     Serve over ice cream.  You can store this in your refrigerator for several days.  Enjoy!

    Buttermilk Pancake Mix

    Rainy Day Foods Buttermilk Pancake Mix is a simple and easy way to make breakfast for your household. For those mornings when you’re in a rush, this is our quick and less messy way of doing breakfast. To start with, plug in and preheat your waffle iron to the desired temperature. Then we make our waffle batter by taking a disposable 18 ounce cup and fill it ¾ full of Rainy Day Foods Buttermilk Pancake Mix. Add water a little at a time into your pancake powder and stir with a butter knife. Continue to add water and stir until you have your desired consistency, but be sure to not over mix the batter. We like our mix to be thick enough that it’s not watery, but thin enough that it flows into the waffle iron with ease.

  • Hot Cocoa Mix


    Building snowmen, shoveling sidewalks, making snow forts…..  With the cold and snowy days of winter upon us, one of the things my family really enjoys is drinking a steaming hot mug of cocoa when we come indoors.  Whether it’s topped with a dollop of whipped cream or a handful of mini marshmallows we love to sip on this rich and creamy drink to warm us up.  Maybe hot chocolate means something different for you like huddling up by the fire in a blanket at night, a way to relax after a hard, stressful day, or an energizing hot drink to send you on your way in the morning. Having treats on hand like hot cocoa mix can provide fun and relaxation for everyone. Hot cocoa is not just for wintertime.  We always take it with us when we go camping.  There is nothing like a hot mug of cocoa on a cool morning in the great outdoors.  Preparation is so easy!  Just add a couple of heaping tablespoons to boiling water and stir.   • Germade

    With the cold winter mornings upon us, I like to send my family on their way with a hot breakfast.  One of their favorites is a hot bowl of germade.  What is germade?  Germade is made from wheat that has had its bran and germ removed.  Then, the endosperm that is left is coarsely ground and packaged.  You may know it as farina. The name farina comes from the Italian word for meal or flour, which in turn traces to far, the Latin name for spelt, a type of wheat.  Farina was the first genuine flour before milling stones.  The most common name for germade is Cream of Wheat.  Germade is most often served as a breakfast cereal, but can also be cooked like polenta.  The great thing about it is that it is high in protein and easy to digest.  It is also very quick and easy to make.  Here is how I did it:

    1 c. milk

    ¼ c. germade

    ½ tsp. vanilla

    1 tsp. brown sugar

    Heat the milk until just before boiling.  Reduce heat and add germade stirring constantly until thickened.  Add more milk if it is too thick.  It should be ready in about 10 minutes.  It may be served with assorted fruits, whipped cream, yogurt, maple syrup, raisins, or cinnamon.   It may also be prepared with boiling water.  The milk makes it a little creamier.
