Rainy Day Foods gluten free Chocolate Sandwich Cookie mix is one of the most versatile mixes we have.  You can make sandwich cookies, ice cream sandwiches, cookie bites, and chocolate pie crust. Keep a few on hand for that day that you want a chocolate cookie to dip in milk or gluten free ice cream sandwiches on a hot day. Also try your hand at pie.  Just add an egg, butter or margarine. One package won't be enough. It will be perfect in your food storage pantry for the rainy days you need a treat.


Ingredients:  White rice flour, potato starch, tapioca flour, sugar, baking cocoa, xanthan gum, guar gum, baking powder, salt.

Rainy Day Foods dehydrated gluten free chocolate cookie sandwich nutritionDirections: For all cookies, add: 1 egg, 11 Tbs. butter, 2 Tbs. water. Preheat oven to 350 degrees. Line baking sheet with parchment paper.

Cookie Bites:  Press 1 Tbs. dough around your favorite bite size candy. Roll in sugar and bake for 8-10 minutes. Cool on pan for 5 minutes.

Ice Cream Sandwiches:  On lined pan roll out dough to thickness of 1/8 inch and bake 15 to 18 minutes. Remove from oven. Allow to cool 5-10 minutes. Cut into ice cream sandwich shape using knife or cookie cutter. Let cool and fill with favorite ice cream.

Pie Crust:  Add 1 1/2 cubes softened butter or margarine. Mix till the constancy of crushed crumbs. Press into 2-9 inch pie pans or 1-12 inch spring form pan. Bake at 350 for 15 minutes. Fill with your favorite pie filling.

Cream Filled Chocolate Sandwich Cookies:  Using medium scoop (about 1 Tbs of dough) drop onto parchment paper and press flat with fingers. Bake for 8 min. Cool on pan and fill with your favorite icing recipe.
