This is a deliciously moist bread the whole family will love and beg for more. They won't even know that it is gluten free. Makes a 9x9 inch pan, Serve with honey butter for an excellent combination of flavors. Just add shortening, eggs, and buttermilk.

Ingredients: Cornmeal, White Rice Flour, Potato Starch, Tapioca Starch, Aluminum-Free Baking Powder (Sodium Acid Pyrophospate, Sodium Bicarbonate, Corn Starch, Monocalcium Phosphate), Organic Evaporated Cane Sugar, Salt, Baking Soda, Xanthan Gum.

Directions:  Add: 1/4 cup shortening, 2 eggs, 1 1/2 cup buttermilk (substitute 1 1/2 cup milk and 1 Tbsp vinegar or lemon juice for buttermilk).  Heat oven to 450 degrees. In a medium sized mixing bowl, pour mix in and then add shortening, eggs, and buttermilk. Beat vigorously for 30 seconds. Pour into a greased 9x9" pan. Bake for 25-30 minutes.
