Bakers flours is sometimes known as bread flour in older recipes. Bakers flour has a higher protein count. It also has a higher gluten content. Bakers flour usually has a 12.0-12.5% protein count. The flour is unbleached and contains No Bromate. This flour is great for yeast base recipes, such as breads and pizza. Also works with breads that need fermentation time, such as Sourdough recipes. Since the protein count is a little bit higher than regular flour bakers flour is able to develop the gluten with in the flour. Gluten is what gives a bread the light and airy texture.
