Lecithin improves the moisture tolerance and uniform suspension of ingredients in baking. It stabilizes fats and oils to reduce rancidity and prolongs freshness. Lecithin is sometimes used as an emulsifier and to prevent sticking. A good ingredient to have on hand for every day use or to store in your emergency food storage supply.

Shelf life estimates are based on industry studies from sources deemed reputable. Since Rainy Day Foods has no control over individual storage practices, they must disclaim any liability or warranty for particular results.

Shelf Life:  Should be stored in cool dark place- optimum condition is 60 degrees or less- for longer storage. Storing properly in our enameled cans and Super pail buckets, product may store up to 5-10 years. Bulk products need to be repackaged for long term storage.

Directions: Use lecithin in baking breads, rolls, muffins, biscuits, pancakes, etc. by adding approximately 2 Tbsp. per 3-4 cups flour.  Improves the moisture tolerance and uniform suspension of ingredients.  It stabilizes fats and oils, reducing rancidity and prolongs freshness.  May be added  to protein drinks and juices blended in a juicer.
