Directions:  (4 - 1/2 cup servings) Bring to a boil; 2 cups water and 1/4 tsp. salt.  While using a wire whip at low speed, slowly add 1/2 cup potato granules.  Mix at low speed until uniform about 30 seconds.  At high speed, whip until light and fluffy, 1-4 minutes.  If desired, margarine or butter can be added for richer, creamier texture.   For thicker mashed potatoes, add more potato mix; for thinner potatoes, add more hot water.
