1 cup uncooked millet 2/3 cup chopped dates
1/2 cup soy milk powder 1/2 cup flaked coconut
5 1/2 cups hot water 1 tsp vanilla extract
Preheat oven to 350 degrees F.
Combine millet, soy milk powder, hot water, chopped dates, coconut and vanilla in a 9x13 inch casserole dish.
Bake casserole in preheated oven for 30 minutes. Remove and stir. Return casserole to oven and bake an additional 30 minutes. Serve hot.
