2 cups potatoes (mashed with skins on) ¼ cup parsley, chopped

2 cups quinoa, cooked                                      ½ tsp salt

2 eggs, beaten                                                    ½ tsp cumin

½ cup onion, chopped                                       ½ tsp oregano

Combine all ingredients. Mix well and form into 1” balls. Deep fry balls until golden brown.
