1 lb garbanzo beans 8 cups water ½ cup olive oil 1 large onion, diced ½ clove garlic, diced 4 tsp salt ½ tsp pepper ½ tsp oregano 2 bay leaves ½ (6 oz) can tomato sauce ½ (6 oz) can stewed tomatoes 4 med size potatoes, peeled Rinse beans until water runs clear and let them soak overnight. Sauté onions in olive oil and when tender add all other ingredients with the exception of stewed tomatoes and pepper. Sauté for 2 more minutes. Bring garbanzo to a boil and add all ingredients. Lower heat to low and boil until tender. More water or salt may be added to taste. Cooking time will be approximately 2 ½ hours.
