Who doesn’t enjoy fresh-baked muffins?  I certainly love them and so does my family.  I recently tried the basic muffin mix from Rainy Day foods and was pleasantly surprised at how good they were.  Since it is a mix, making them was very easy.  You simply add water; oil can also be added.  I tossed in some huckleberries that I keep in my freezer, but you could add any fruits or other condiments that you can think of.  My kids are begging me to make them with chocolate chips, and I was thinking of trying grated zucchini.  You can get the mix in a #10 can or a 30 lb. bag.  That beats buying a mix at a grocery store, where you get one batch and you’re done.  I purchased the #10 can so that I could try them and not be stuck with a lot if I didn’t care for them.  When I made them they didn’t last very long because they were so good, so now I will be buying the bag to keep a lot in my storage.
